For the longest time, a massive (I’m talking six eggs kind of massive) omelette with all the fix-ins was a go-to morning breakfast for my boyfriend Charlie.
That being said, I knew I would have to find some sort of egg-like stand-in when the hankering for an omelette hit!
Of course, it is difficult to make anything exactly the same of its animal-based counterpart, but I knew I had to give it a go! With a little chickpea flour and nutritional yeast you can easily whip up a vegan omelette; I have to say, even if it wasn’t eggs, it was pretty damn good!
vegan chickpea flour omelette
Super easy chickpea flour vegan omelette with minimal ingredients!
Ingredients
Egg Base
- 14 grams vegan butter or olive oil for frying
- 60 grams chickpea flour
- 160 ml water
- 5 grams nutritional yeast
- ¼ tsp paprika
- ¼ tsp turmeric
- salt and pepper to taste
Add -Ins
- 25 grams vegan cheese of choice
- 100 grams veggies of choice
Instructions
- Mix the chickpea flour, nutritional yeast, spices and water in a blender or by hand until there are no lumps.
- Dice up and sauté the vegetables you want to add to your omelette.
- In a separate pan, add oil or butter and heat to medium before pouring in the batter like you would a large pancake and cook for about three to four minutes until the top of the omelette no longer looks wet.
- Flip the omelette over and add on veggies and vegan cheese and place lid on top to help the cheese melt and the other side to cook evenly for about another two to three minutes).
- Slide off of pan onto a plate and fold over to make that traditional omelette shape.
- and serve with hot sauce and avocados or any other topping that you would like.
