parsnip, artichoke & fennel traybake
A super simple and fresh parsnip, artichoke and fennel tray bake roasted and served with a cilantro lemon dressing with israeli couscous and crunchy radishes.
Ingredients

- 300 grams parsnips approx 2 large, sliced
- 100 grams radishes sliced
- 800 grams artichokes 2 cans, sliced in quarters
- 5 grams cumin
dressing
- 60 ml olive oil
- 6 grams 1-2 cloves garlic
- 30 ml lemon joice
- 20 grams coriander
- 300 grams Israeli giant couscous, dried
Instructions
- Place all vegetables for tray bake on a roasting pan and drizzle with olive oil, salt pepper and cumin and roast for 30 minutes, mixing around half way.
- Meanwhile,make the couscous according to the instructions.
- Also add all the ingredients for the dressing into a high speed blender or food processor until combined.
- When vegetables are done roasting mix in couscous and dressing and serve warm with radishes on top.
