I have made this potato salad every weekend for the past two weeks for picnics and bbq’s that we have had with friends and family and each time it has been a hit! It is so easy to throw together and since it uses vegan mayonnaise, you don’t have to worry about it getting slightly warm in the sun and is still delicious.

Easy and delicious potato salad for any summer picnic!
Ingredients
- 1.5 kg potatoes
- 175 grams vegan mayonnaise
- 15 ml apple cider vinegar
- 15 ml wholegrain mustard
- 1 tsp dried dill
- 50 grams green onions sliced thinly
- 100 grams celery sliced thinly
- ¼ tsp smoked paprika for garnish
- salt and pepper to taste
Instructions
- Boil a large pot of water. Meanwhile, chop the potatoes into one-inch pieces. Add to the boiling water and cook for about 10 minutes until fork tender. Drain and let cook with running cold water.
- In a separate bowl, mix together the mayonnaise, vinegar, mustard, dill, salt and pepper. Add in the green onions, celery and cooled potatoes and gently toss to coat with the dressing.
- Refrigerate for 30 minutes to an hour before serving to let the flavours meld.
