I have made this potato salad every weekend for the past two weeks for picnics and bbq’s that we have had with friends and family and each time it has been a hit! It is so easy to throw together and since it uses vegan mayonnaise, you don’t have to worry about it getting slightly warm in the sun and is still delicious.

Ingredients
 
 

  • 1.5 kg potatoes
  • 175 grams vegan mayonnaise
  • 15 ml apple cider vinegar
  • 15 ml wholegrain mustard
  • 1 tsp dried dill
  • 50 grams green onions sliced thinly
  • 100 grams celery sliced thinly
  • ¼ tsp smoked paprika for garnish
  • salt and pepper to taste

Instructions
 

  • Boil a large pot of water. Meanwhile, chop the potatoes into one-inch pieces. Add to the boiling water and cook for about 10 minutes until fork tender. Drain and let cook with running cold water.
  • In a separate bowl, mix together the mayonnaise, vinegar, mustard, dill, salt and pepper. Add in the green onions, celery and cooled potatoes and gently toss to coat with the dressing.
  • Refrigerate for 30 minutes to an hour before serving to let the flavours meld.
