cashew & cranberry energy ball
These three-ingredient cashew & cranberry energy balls are super simple, delicious and perfect for a quick on the go snack.

- 50 grams dates pitted
- 50 grams dried cranberries
- 100 grams cashews
First add the dates to the food processor and pulse on high for 30 seconds until the dates are broken into small pieces
Add in the cranberries and cashews and continue to blend on high for two minutes until large cashews are broken down and mixture is well combined.
Take a tablespoon of the mixture and roll into a ball.
Continue rolling into balls until mixture is used up.
Place in a container and let rest in fridge for atleast 1 hour.
Store in the fridge.
