Okay, so it’s been awhile! Work has been absolutely crazy so I am excited to finally get some time to sit down and write out some of my favourite quick and easy recipes I have been whipping together this past month.

It’s without a doubt that when you are busy, cooking, meal planning and “healthy” eating goes out the window. So, these three-ingredient cashew & cranberry energy bites are a godsend when I need a quick snack but are lacking in the time department. All you need for these balls are a high-speed blender or food processor, cashews, cranberries and dates and you are good to go!

Obviously, there are so many versions of healthy energy balls such as Deliciously Ella’s Energy balls but I have to be honest, they are both cheaper and easier to just have on hand at home when you need one!

These three-ingredient cashew & cranberry energy balls are super simple, delicious and perfect for a quick on the go snack.

Equipment

  • food processor

Ingredients
 
 

  • 50 grams dates pitted
  • 50 grams dried cranberries
  • 100 grams cashews

Instructions
 

  • First add the dates to the food processor and pulse on high for 30 seconds until the dates are broken into small pieces
  • Add in the cranberries and cashews and continue to blend on high for two minutes until large cashews are broken down and mixture is well combined.
  • Take a tablespoon of the mixture and roll into a ball.
  • Continue rolling into balls until mixture is used up.
  • Place in a container and let rest in fridge for atleast 1 hour.
  • Store in the fridge.
